Is there a way to make this work on Mac?

Not at this time. The mod it seems does not use .BIG files, and releasing the individual mod files without the installer would create a support nightmare.

There are hundreds of files put it place by the installer. Having to remove them manually would be a daunting task, to say the least. It is likely that anyone who installed the mod manually and then tried to remove it would end up breaking their Generals or Zero Hour installation.
