Is it possible to change models when switching weapons? If so, how?

You can use bike logic.

I.E. your switch button causes a fake rider to switch. This will allow you to change the model, weapon and you can even change the locomotor.

If you want to learn how to do this, you're best copying one of the major mods that uses this work around.
