in vanilla and different mods i saw lots of variations how rockets behave: flying in straight line close to ground, flying close to ground but like little shaking in sides, flying more and up and then suddenly down on target, flying in ark like most mortars. how/where these rockets are set to fly like that?

yet i wonder, if it's possible to make a rocket that starts to fly slow but gains speed after some distance?(or maybe flies faster when it travels longer distances)
